- Preheat oven to 425.
- Wash sweet potatoes and pat dry.
- Bake for 60-90 minutes, depending on size of sweet potatoes, or until soft when pierced with a fork.
- Serve with butter and cinnamon sugar.
- Oven-baked sweet potatoes are great for a day or two after they’ve been baked. I usually make enough to have a couple left over, unpeeled. I just leave them on the counter, and the next day, I enjoy just slicing open the skin and scooping out the good stuff with a spoon. No need to heat them up (unless you want to). Just enjoy them at room temp with a glass of milk.
